Lovely leftovers
Leftover turkey can often tast better than first time around! Cook up a Boxing Day feast with what’s left of your Christmas lunch - chop up your roast potatoes and brussel sprouts and throw into a pan with some Indian spices for a tasty bubble & squeak served with your cold meats. The large jars of coleslaw and chutneys may not get eaten entirely on Boxing Day but kept chilled will be great topping for a jacket potato on Dec 30th when the yearning for something normal is starting to creep in.
Why shop for more when you can enjoy the lovely old favourites of turkey curry (a great time saver if you use a cook-in sauce from the store cupboard), turkey soup, turkey, cranberry and stuffing sandwiches or creamy turkey and ham pie - as much part of the tradition of Christmas feasting as the main meal itself.
Leftover veggies are delicious roasted or used in soups. Leftover cranberry sauce can be added to a jelly mix with leftover clementines for a dessert the children will love.
The freezer is as handy after Christmas as before - pop in your leftover cheeses, cooked meats and sausages to eat at a later date. A bit of stilton, a slice of panettone, sausage rolls and party bites, would make a welcome treat in your packed lunches in the New Year.
